Hi,
Which GeoServer version are you using ? You are pointing to GeoServer latest documentation which may describe features that have not been released yet and are only available in the nightly build. GetFeatureInfo reprojection will land on the upcoming releases 2.1-beta, 2.11.2 and 2.10.4.
Note that GetFeatureInfo results re-projection will be enable by default.

However, I can't find it anywhere in the Admin interface. It's not where
the documentation says it should be (which is Services -> WMS).
Does anyone know where this is? I think this may be my problem.
